My favourite one in Guangzhou is Gold Mango. This bar is placed on Huanshi Dong Lu - comfortable to get there with almost any transport. The best place to spend an hour or two over a Heineken in a fine beer garden.
Another thing that makes this bar special is the welcoming staff.
